Misomite, tofu and tuna might sound like an unusual combination for fritters, but they make a tasty and healthy lunch. I invented them on the spur of the moment using ingredients I had to hand, and I'll make them again, especially for vegans!
Ingredients: for one person ( the recipe can easily be doubled)
95 grams of tuna in springwater (drained)
2 teaspoons of misomite
50 grams of soft tofu
3 tablespoons of panko breadcrumbs
1 spring onion finely sliced
Method:
Mix all the ingredients together and shape into small patties
Fry in a tablespoon of rice bran oil.
Be careful when turning as they are fragile. You may need to use a little more oil if they look like sticking.
Serve with a hot chilli or soya dipping sauce.
