A Christmas Salad
This salad with its festive red, green and white colours make a perfect Christmas salad. But it’s also a stand out at any time of the summer until the asparagus and strawberry seasons are over.
Like all salads it tastes best if the ingredients are freshly picked. I gather the ingredients in the early morning from our Sunday Takapuna market and also fill my basket with some excellent cheeses, salami and breads. A casual meal using these can be on the table within 15 minutes. It’s the perfect way to entertain.
Ingredients:
1 punnet of strawberries (sliced)
1 bundle of asparagus (look for slim stalks)
125 grams of feta cheese (cubed)
A couple of handfuls of baby spinach leaves
1-2 avocados, peeled and sliced
Dressing:
6 tablespoons of olive oil
2 tablespoons of Lupi's white balsamic condiment
Pepper and salt to taste
Method:
Bring a pot of salted water to the boil and cook the asparagus stalks until just tender (young fresh thin stalks should not need more than 3-5 minutes)
Drain, immerse briefly in cold water, then drain again.
Arrange all the salad ingredients decoratively on a platter.
Drizzle the dressing over.
( Lupi's Balsamic Condiment is fruity and slightly sweet. It is available in supermarkets and I use it frequently in salad dressing. If it can't be found use lemon or lime juice instead but you may need to add 1/2 teaspoon of honey.
