Christmassy Cucumber Nibbles

I love litttle mince pies, and rum balls and chocolate brownies but sometimes I crave something healthier and then I slice up a telegraph cucumber into thick chunky rounds and decorate them with a swirl of organic mascarpone from The Cheese Barn .This is a luscious, creamy thick mascarpone. I thinned it a little with some yoghurt. The final touch was a sliver of red chilli pepper. For less heat a sprinkle of red paprika or some chopped red pepper could be used instead.
