Here is my friend Gill's recipe for a spiced Feijoa cake, nice to have with a cup of coffee. And should there be any leftovers it's a good keeper.
Spiced Feijoa Cake
1 egg
1 cup raw sugar
125 g butter
Feijoas - flesh scooped
out to obtain 1½ c feijoa chunks
1¾ c standard flour
Pinch salt
1 tsp soda
1 tsp cinnamon
½ tsp ground cloves
½ tsp allspice
1 Place the sugar and egg in a bowl and beat a
little with a fork
2 Melt
the butter and add to the bowl
3 Add the scooped-out feijoa chunks and mix
4 Mix all the dry ingredients together and sift
them into the egg and fruit mixture
5 Pour into a lined and greased 22cm or 24cm
round tin and bake at 180°C for about 40 minutes, until a test skewer comes out
clean. Cool a little before removing
from the tin.
